In Pursuit of the Perfect Scone

The humble Scone when made correctly is a culinary delight.  They are such simple things, made from flour, milk, fat, a little sugar put it all together in a hot oven and voila, the scone. But it’s not that simple. For years my mother tried to make this puffy, light, delectable morsel but couldn’t. She could however, make what appeared to be nice looking scones but tasted like bricks. I have tried for years myself until about 10 years or so, well one has to give up some time. Mine would turn out looking deceptively like yummy tasting scones, they would even taste nice while hot, although after eaten I could always taste this aftertaste on my tongue, floury, dry, yuck.  Once these scones had turned cold, their stodgy side really came out and they were completly... Healthy Choice

Today more than all the years before it should be easier to maintain a healthy weight. But As I look around the shopping mall food courts I see a dichotomy. There are a large amount of overweight people but almost every food outlet has their food labeled with kil/cal energy values. So if you want to eat low kil/cal food you can choose appropriately. Years ago, I would have loved this added information. Instead of blindly ordering what I thought might be low the healthier option. Most of the time I just didn’t eat out. I was too scared of blowing my diet. And there is even organic food. Fabulously nutritious and the better alternative. So what is it with people? Do they care about their health? Do they care about being overweight? Do they care but don’t want to know? Do... Read More

True Justice

Life wasn’t meant to be easy. I know that but at the moment everywhere I turn injustice leaps at me, sticks its tongue out and does a happy dance. It really is driving me nuts. I’m sure you can relate to the feeling. You are working hard, I mean real hard, you obey all the rules, no one appreciates you and the guy that doesn’t obey the rules, is not working at all and gets all the cudos. It sort of does something to your attitude. Makes you want to eat a live chicken, no Yuck too many feathers. I am into justice. But there is no justice in this world. I remember one day around eighteen years ago I was arriving home after another belting of some kind of injustice (I can’t remember what it was). I got to the front door and I said, “it’s not... Stress Busters

Everyone has to deal with stress. I have noticed when people go through stressful situations they put even more unnecessary pressure on themselves. For example, moving house is near the top of the list of stressors but instead of understanding this and reducing unnecessary activities, some people put extra pressure on themselves by not planning, doing extra activities, working more because they think more money will solve the problem, but it can’t. Arguments begin with their spouse or and children. This only causes more stress. There are no prizes for “the I can deal with more pressure than you” mentality. Do you have a list of fun things you enjoy doing and some that are just for relaxation? If you don’t, make one. Of course you need to know what relaxes... Read More
