Low Fat Cheesecake YUM!!!!

When I was desperate for a low fat cheesecake recipe this one fell into my lap. Honestly, this cheesecake is delicious and low in fat. (Yes you can have delicious and low fat in the same sentence. It is baked and instead of cream cheese it has low fat Ricotta. LOW FAT BAKED CHEESECAKE 500gms Low Fat Ricotta 375gms Skim Evaporated Milk 3/4 cup Castor Sugar 1/2 cup Plain Flour 3 Eggs separated 1 teaspoon Vanilla Essence 1/4 teaspoon Lemon Rind Whip all ingredients except egg whites in a blender or beat by hand. Whip egg whites till stiff then add to the mixture and fold in. Spray 22cms cake tin and pour in. Bake for 30-40 mins in moderate oven or until an inserted knife comes out clean. Interesting how animated films and live action fairy tales can really get you thinking. I recently saw Maleficent with Angelina Jolie. In the beginning I wondered why Angelina (yes Angelina and I are on a first name basis only she doesn’t know that yet) would take this role of a weird horned fairy with huge wings. As the story progressed I realized this was no superficial fairy tale but one that showed depth of character. In most fables we are presented with good characters and evil characters end of story. Here’s an easy healthy gourmet brekkie idea you will love!!!! Some things in life are just plain weird. But instead of fighting it just go with it. For example I can eat 2 eggs a day usually poached, scrambled or boiled but every time I eat an omelette I feel a little queasy. I’ve never tried an egg white omelette (sounds disgusting) until recently. I not only didn’t feel sick but I loved it. Go figure weird huh?
